Among Europe's most precious honeys, black bee honey (Apis mellifera mellifera) stands out for its depth, aromatic complexity, and artisanal production. Produced in very small quantities, it is the fruit of the work of hardy, endemic bees that live in harmony with the seasons and local flora.
Who are the black bees?
The European black bee is an ancestral subspecies, present in many regions of Western Europe: Brittany, Ardennes, Massif Central, Pyrenees… and in Belgium , particularly in the regions of Wallonia and Condroz. More resistant to cold, less productive, but also more faithful to its territory , it adapts to local conditions and preserves a precious honey diversity.
Today, it is threatened by industrial hybridization, pesticides, and the intensification of modern beekeeping. Protecting the black bee means preserving a fragile and local biodiversity , including in Belgium, where several committed beekeepers are working to safeguard it.
A rare, living and seasonal honey
Black bee honey is not a standardized honey. It varies according to:
-
the type of flowers foraged (hawthorn, bramble, clover, acacia, chestnut, etc.)
-
the region and the climate
-
harvesting methods , often gentle and manual
It is often darker, richer in minerals , and gives off woody, spicy, and sometimes liquorice notes. Its crystallization is natural and rapid, a guarantee of unheated quality.
