In Gomagoda, in the heart of Sri Lanka, Shantha has been cultivating heirloom chili varieties with the same meticulous care for over four years. Everything is done by hand: the soil is prepared without machines, the chilies are harvested at full maturity, and then slowly dried in the sun.

These intense red flakes are the result of this patient work. Raw, powerful and crunchy, they concentrate all the heat of the ripe chili, without artifice.
